If I’m using a software sequencer in Ableton to play notes on my external synth will U-Sync record the audio coming back into Ableton on the grid?

This is not possible at the moment, unfortunately. The Nome is a clock, and for now it only sends MIDI Clock. The idea is that you are sequencing from a hardware sequencer which can be synced to MIDI Clock.
Making MIDI notes going through U-SYNC is a coming feature in U-SYNC 2.0, but for now there is not ETA.
There are quite a few people asking for this lately, which will definitely boost when this feature will come (since, as the rest the Nome development is driven by the community

So my software sequencer is sending midi notes from Ableton via a separate USB MIDI cable to my synth. The Nome is in sync with Ableton. So are you saying U-Sync won’t be able to record the audio on the grid? Is it only the sequencer on the external synth whose notes are recorded on the grid?

The Nome does not record audio, it only sends a MIDI Clock tightly in time with the DAW grid. When you send that clock to a sequencer, or a synth with an arpeggiator/sequencer built-in, then you can record those (the usual way, plugging an audio cable from the output to your audio interface) on the grid.
What you cannot do (at least until U-SYNC 2.0) is to write your whole sequencer with MIDI Notes inside your DAW.

PS: as for sending MIDI Notes, you can do it through the Nome as well (they get merged with the clock), but the difference is they are sent to the Nome over USB-MIDI, not over U-SYNC. So they suffer from the same timing that MIDI Clock does when you send it without the Nome.
