You can check this on your device by comparing the volume, each "number" is a 6dB difference.
To quickly change the volume hold the setup button down and turn the knob.

Yes, you're correct, it works exactly like a USB-MIDI interface (it is one, in fact).
And no, U-SYNC makes no difference for MIDI forwarding, U-SYNC is only used for clock/start/stop, not for sending other MIDI data like Notes, CC, etc.

Note that the advanced settings will be moved to their own sub-menu anyways in FW 4.0 coming in January.
